Is Gore-Tex really worth the extra cost for snow pants, or is regular nylon fine?

Gore-Tex is absolutely worth it if you ride often in wet, stormy, or coastal conditions where regular nylon shells can eventually soak through. It's a premium membrane laminated to the outer fabric that sets the industry standard for keeping water out while still letting sweat vapor escape — so you stay dry from both sides. If you're a serious rider logging lots of days, especially in places like the Pacific Northwest or during heavy storm cycles, Gore-Tex delivers proven, long-term performance that cheaper materials can't match.

That said, if you mostly ski or ride in cold, dry climates (think Utah or Colorado bluebird days) or only get out a handful of times a season, a quality nylon shell with a solid waterproof rating will serve you just fine at a much lower price. Gore-Tex commands a premium, and over-purchasing for casual use is a common mistake. Save the investment for when you truly need that extra level of weather protection.
